En dehors de que ce qui est g\u00e9n\u00e9ralement admis en naturopathie ou en m\u00e9decines traditionnelles, on peut se r\u00e9f\u00e9rer \u00e0 l’indice PRAL (Potential Renal Acid Load) du professeur allemand Thomas Remer. Il a le m\u00e9rite de se baser sur des donn\u00e9es factuelles.<\/p>\n
Le PRAL mesure la quantit\u00e9 de min\u00e9raux basiques (magn\u00e9sium, calcium, potassium…) et des \u00e9l\u00e9ments acides (chlore, soufre, phosphore…) des aliments, et celle des prot\u00e9ines (notamment des acides amin\u00e9s soufr\u00e9s). Des \u00e9tudes ont pu v\u00e9rifier diff\u00e9rentes variations de pH urinaire apr\u00e8s ingestion des aliments concern\u00e9s (1).<\/p>\n
Dans ses grandes lignes, ce classement parait fiable mais pas absolu car il ne consid\u00e8re pas tous les min\u00e9raux contenus, ni la pr\u00e9sence d’ions basiques (bicarbonates, citrates…), ni tous les param\u00e8tres de la digestion des aliments.<\/p>\n
De plus, il ne peut pas prendre en compte l’assimilation\/digestion de ces nutriments, variable selon les individus, ni les diff\u00e9rences li\u00e9es \u00e0 la qualit\u00e9 et \u00e0 la provenance des aliments.<\/p>\n
Il y a deux calculs possible du PRAL, et la composition des aliments pouvant varier l\u00e9g\u00e8rement, les chiffres peuvent \u00eatre sensiblement diff\u00e9rents d’une liste \u00e0 l’autre. Ceci \u00e9tant, l’ordre de grandeur des indices PRAL est int\u00e9ressant pour classer les aliments.<\/p>\n
En r\u00e8gle g\u00e9n\u00e9rale, la m\u00e9thode PRAL confirme la classification traditionnelle, <\/strong>et des \u00e9tudes en ont confirm\u00e9 le bien fond\u00e9 (2)(3). Malgr\u00e9 quelques exceptions que nous mettrons en \u00e9vidence dans les tableaux ci-dessous, on peut retenir que :<\/p>\n Notez, qu’\u00e0 poids \u00e9gal<\/b> : les fruits s\u00e9ch\u00e9s sont plus alcalins. La cuisson de certains fruits (comme les tomates ou prunes…) les rend acides, de m\u00eame lorsque les fruits ne sont pas assez m\u00fbrs.<\/p>\n Voici donc une liste d’aliments alcalins (ou disons plut\u00f4t alcalinisants<\/strong>) :<\/p>\n Plus le chiffre est n\u00e9gatif, et plus l’aliment est alcalin. En italique <\/em>dans le tableau, les aliments qui traditionnellement sont consid\u00e9r\u00e9s comme acidifiants pour l’organisme (en d\u00e9saccord avec le PRAL).
